15 Healthier Gluten Free Desserts for Summer

Image
New blog post! Since summer is right around the corner and it’s officially the start of Celiac Awareness Month this May, I thought it would be a good time to revisit one of my popular posts from last year ( 8 Healthier Gluten Free Desserts for Summer ) and share 15 of my favorite gluten free desserts at the moment that are a bit on the healthier side. Now, I’m all about eating full-fat vegan ice cream and sugar-filled chocolate . But since I do have a pretty strong sweet tooth, I try to sneak in healthier options where I can. The best part? All of the products I’m sharing may be a little healthier…but they still taste pretty dang tasty! (And just as a FYI, this post is totally unsponsored, though I did receive a few of these products as samples or prizes from giveaways. And while many of the products I’m mentioning are certified gluten free, some are not and I always encourage people to do their own research to determine what products are the right fit for them!). So without fur

Can't eat beef anymore.

Ive been carnivore eating mostly beef, some salmon and liver weekly aswell as some bacon on the weekend. It’s been 3 weeks and I wouldv'e never thought eating burgers everyday would get old. Now I can barely stand the smell of cooking ground beef without gagging. I wasn’t craving carbs for the first 3 weeks but now its so tempting. Should I just wait this out and fast to see what happens? I figure eventually ill get hungry enough to where I have to eat it. from Zero Carb Zebras http://bit.ly/2vvwl88 via IFTTT

Dizziness during workout

Since starting keto and then transitioning to 0 carb/carnivore, I get dizzy when working out, especially legs. And I mean I just did 4 sets of not so heavy squats and I feel like I’m about to pass out kind of dizzy. This is completely ruining my workouts. I am 20 years old, 6’2”, 196 lbs and in good athletic shape. This never happened before I started 0 carb or keto. I eat a pound of ground beef before coming to the gym and drink ample water and consume plenty of electrolytes. What could be causing this? Anyone else have this issue? I really need help here, this is completely ruining my workouts. from Zero Carb Zebras http://bit.ly/2IRHMQk via IFTTT

Alcohol and adaptation

Hey everyone, I’m just about 2 weeks into the journey and have been definitely having my ups and downs with adaptation. This past weekend, and for most of the foreseeable future, I plan on hanging out with friends and probably drinking a couple of zero carb drinks (such as scotch or vodka). Since I am so early on the adaptation phase, I can’t be certain about if the alcohol this past weekend has affected me negatively in terms of fat adaption with a steak only diet or not.Does anyone have any insight on drinking on the weekends while still adapting to this diet? from Zero Carb Zebras http://bit.ly/2vtsmc6 via IFTTT

It’s been awhile since I’ve shown my face on here (since I finished Fall semester, actually 🤪), so I thought I’d share a lil’ update. I’m in the middle of my last week of classes before finals week 📝 and I am soooo beyond burned out. I’m crazy proud of everything I’ve accomplished this semester - juggling three jobs 👩🏻‍💻👩🏻‍🏫👩🏻‍🌾, experimenting with new units in the English class I teach, entering a long-distance relationship, and writing a toonnnn for my thesis (I’m getting an MFA in creative writing 🖋💞) - but this was definitely the hardest school year of my life. So when I got a rare Monday off yesterday…I did very little school work 🙏🏻. I slept in. I baked for the first time in ages. And I went an hour long walk to a nearby lake. And even though the goose in the background was VERY critical about my impromptu photoshoot 😂😂…I definitely am hoping to have many more walks like this come summer time! Mood Changes with Dairy?

So I’ve been pretty good for the past month on ZC, just having occasional steak sauce. I hadn’t had dairy for a few weeks, but today I thought I would try to have some kefir because I wanted to see how it went, and I feel awful! Just had my best workout in 8 years (hint: electrolytes)

I don’t know if this fully applies for ZC, if not I apologize. Just wanted to share my experience and perhaps a shortcoming I just figured out.I started working out about 6 weeks ago. I usually go 3-4 times a week. My workouts go well enough but lack that primal intensity. Usually I just force myself to go and when I’m there I go through the motions and try to sweat a bit. About three weeks ago I started ZC and I LOVE it. I feel steady energy throughout the day, no crashes, no brain fog, my will power to resist junk food is amazing, and my sugar cravings are all but gone. I have settled in to eating once every 12 hours and it works well for me.Anyway, since starting this I am not one to mess with a good thing, so I didn’t take any supplements. However I read on this sub that electrolytes are important to have, especially in the first month. So today I took some electrolytes 30 minutes before my workout.I felt incredible!I had zero lethargy, zero exhaustion and none of that that feeling

Crispy Fried Chicken Without Carbs?

I want to fry some chicken thighs in bacon grease after i’m done preparing bacon. Usually i’ll make 1-1.5lbs of bacon on the stove at once which leaves a lot of bacon grease to fry in. Normally, I would use milk, eggs, and either breadcrumbs, flour, or cornstarch. Is there anyway to get a similar “crust” without them? I have heard of pork rinds that have been crushed up but that doesn’t sound particularly appealing. Also, that sounds prohibitively expensive compared to the like 5 cents of flour that’s needed. Thanks from Zero Carb Zebras http://bit.ly/2GTJBd6 via IFTTT

8 weeks in and feeling light headed and fatigue

Hey everyone, to summarise things I went into this woe for health. The first 2 weeks were a bit rough though not all bad, 3rd week in I actually caught flu that was going round which sucks but now I’m 8 weeks in and feeling light headed every day. It’s really starting to be a pain, I saw my GP yesterday my blood pressure was fine and I’m having a blood test just to ensure it isn’t some underlying problem ( I was vegan for 1.5 years before this). Has anyone else had this experience 2 months into this woe? My energy levels are terrible also and I’m really struggling to even do one work out a week at the gym currently so I’m trying to listen to my body and not do much exercise at the moment now ( mentally though it sucks as I used to be a lot stronger, I know adaptation is a thing but I was ok on the weeks leading up to this).I’m f/26 , my daily food diary is something like this: Breakfast is x1 190g ribeye steak with 1 or 2 large eggs, a piece of bacon and 1 or 2 pieces of fatty lamb ch

Severe arthritis, menopause symptoms GONE in 2 weeks

I’ve been eating only meat since April 15 (that’s 2 weeks now), and haven’t felt this good in 8 years, since arthritis started in my right hip. I have an official diagnosis of severe bone-on-bone osteoarthritis that just those 2 weeks ago had nearly stopped me from even just walking because of the intense pain. Everyone was like, “Oh, just get a hip replacement, you’ll wish you’d done it years ago!” But I kept wondering why everyone and their uncle is getting hip replacements! I mean, isn’t it a little weird that we all now know someone who had or is getting a hip replacement for severe arthritis? What’s up with this arthritis epidemic, is what I wanna know!I’m a 53yo woman, veteran of several martial disciplines, life-long athlete, and former amateur fitness model until the arthritis started and I got out of shape. And I was about to schedule that damn $32,000 surgery to saw off the top of my femur when I happened to run across Ms. Peterson’s story of remitting her devastating arthriti

Fear of the meat tax

I am quite confident that at some point in the future we will get a meat tax. The majority of people in the west have already been fooled into believing eating meat is bad for the health and the planet. Meat consumption is bad for the medical, pharmaceutical, agricultural/processed food and by second order effects for the health insurance industry as it erodes their profits. There simply is zero benefit to the institutions and the collective beliefs to keep meat available for everyone. My question is how do we best avoid it? I do not think it helps in any way that people become aware of carnivore dieters. What is your take? from Zero Carb Zebras http://bit.ly/2UOXEnZ via IFTTT

Caffeine?

I know many people stick with their morning coffee on this diet. I’ve never been a fan. In fact I hate coffee, and chocolate (never got the appeal). I tried tea for a while but it just made me feel sleepy in the afternoon.I’ve always drunk Coke, Mountain Dew, Pepsi, whatever else brown fizzy liquid loaded with caffeine. Going to zero carb meant yeah, the zero sugar versions. Yeah yeah still bad. Then one day, three days ago, I stopped all sources of caffeine. Just, no more. It’s been three days of peace and quiet. Three days of total alertness and focus. Three days of “oh I’m awake now, better do some stuff”. Three days of zero brain fog. Three days of being indifferent to food in general.I commented that I always got hives at work to a co-worker. What do I do? Start shift and drink a Mountain Dew.Always IBS.What do I do? [Question] TIFU by cutting flank steak into cubes. What are some tasty paleo dishes I can make with it?

See title. I was prepping meat to make a stir fry with my wife tomorrow, but I accidentally cut the flank steak into large (~1 inch) cubes instead of bite-sized strips the recipe requires. Since these cubes are too large to cook evenly in a stir fry but the wrong cut of meat to really make a stew with, do you have any suggestions for nice paleo dishes that can salvage this meal? Plant toxins

Today I took a multi vitamin because I have extremely tired the past week on zero carb. I noticed a terrible amount of soreness and crampy today from my workout which is not typical.Either it was my two pats of butter last night with my meat or the vitamin. Is this even possible? I know carnivore is for me, but the last two weeks I am really tired. Nothing has changed except a ton more work🙄 and I am still fasting. But it is natural not forced. My body doesn’t like a tremendous amount of fat, so there is that too.All is good otherwise!!! from Zero Carb Zebras http://bit.ly/2WfKRMP via IFTTT

Anyone try to eat straight fat trimmings?

I don’t want to get too into the weeds of ‘why’ you’d want to do this…I’m just wondering if any of you have tried, and if it was feasible to do for several days as a 'fat fast’ without getting grossed out. In the past I’ve tried to do a coconut oil fast, which was absolutely disgusting after the first day, so I’m wondering if this would quickly become disgusting too.(“Why?"—tldr: overgrowth of gut bacteria which metabolize undigested protein. I’m trying to starve them.) from Zero Carb Zebras http://bit.ly/2vuptI6 via IFTTT

How would one calculate daily intake?

Is it as simple as, “eat when you’re hungry, eat until you’re full”?I’m 6’7” and 205 lbs. I’m not really overweight at all, I’d just like to have increased mental clarity and get off an SSRI I have been on for years.Does it seem reasonable that 2 lbs of beef a day would be plenty? That is what I have consumed today and I can’t really imagine eating more at this point.Clearly cows are ruminants, does that lead to a higher concentration of vitamins and minerals in beef thank pork or chicken? Is that why there is a preference for beef over other meats? I have a farm and basically unlimited access to beef pork and venison. I’d prefer to eat a mix of the 3.Thanks for any input! from Zero Carb Zebras http://bit.ly/2PBsr6U via IFTTT

291 days carnivore and now with... a meat allergy?

For almost three months I have been talking about weird allergic reactions I have been experiencing.First I thought it was milk, so I cut dairy. It was just a few blisters on my hand, in between my fingers. Should disappear right? Nope, it persisted. So then I thought it was a histamine problem. Then I cut all pork and dry aged meat I ate. Took some anti-histamines to see if I could “empty the cup”. And yeah, it persisted. Then I thought it HAD to be something that was maybe contaminating my meat. Lets say some vegetable oil or plant matter. Even thought this was something called “oxalate dumping”. Would be much easier. But, to my misfortune, it doesn’t seem to be the case. Now, I’m having horrible itchiness and rashes all over my body whenever I eat. And guess what I eat? Amazing ribeyes with nothing but salt.I realized this today since I woke up (naturally fasting) and it seemed to have reduced significantly. Then, after lunch… BOOM massive itchiness. 6h later, it reduces a lot and lose

I am on a different computer to my usual one so I’ll post the link once I have my paws on it again. Surprised that I am not bored eating steak at all. I had some cravings but it was relatively easy to distract myself until the feelings had passed. I haven’t really socialised yet so haven’t yet had the challenge of avoiding alcohol and snacks. Physically, my skin is more ‘oily’ and not as dry as it was before. I haven’t really noticed any reduction in my various ailments but I have noticed that I am ever so slightly more limber. I am pleased about that as I was as stiff as a board before. I have noticed the additional (albeit small) flexibility in the gym today and I am looking forward to more of that. I’ve been full Carnivore for somewhere around 16 months, 2 years Keto before that, and another 8 years Paleo before Ketogenic. Let me tell you, it has been a lonely venture all the way through. Periodic searching through Meetup.com for any kind of Keto or Carnivore group has been fruitless, pardon the pun, yet the vegan groups’ reign ubiquitously. Last night at dinner with friends, I realized how alone I am in this WOE. I ordered my steak with extra butter sans any form of vegetation and the waiter and friends looked at me like I was nuts. Granted, five minutes earlier I was complimented on how healthy and lean I look, yet when I attempted to explain my diet and the reason for it after ordering, the head shaking and finger pointing began. I’m a ticking-time-bomb I was told. “Your heart is going to explode”, said one. “You better get on statins,” said another. “You’re all fat!” Said I. ZC Cyclists Thread!!

I’ve noticed quite a few members here are cyclists either via their flair or their posts. I just got back on the saddle and its my first full season riding while eating this way. Overall I’ve felt really good and strong in my rides. I guess my questions are for those who have been doing this longer than I have:- Do you eat/drink anything special prior to riding?- If you fuel while riding, what do you eat/drink?- Do you eat/drink anything special post riding?- A touchier subject for this sub but…any supplements? BCAA’s, L-Glutamine, etc.The only thing I’ve been doing before my rides is 1 TSP of homemade Sole Water, which provides 478mg of sodium. That’s only if I feel my body needs it though, i.e. I haven’t consumed much salt yet that day. Likewise if I sweat a lot on the ride I’ll do the same thing afterwards along with an 1/8 tsp of potassium chloride (providing 365mg of potassium) in the water as well. Thanks! from Zero Carb Zebras http://bit.ly/2GTnVhu via IFTTT

Ravenous appetite returned.

TLDR: stressful “break up” = cold, hungry and tired. But zc/carnivore has my back.I’ve been eating carnivore/zc since march 2018, mainly eating to satiety. And as I lost weight my appetite became smaller, which is logical since smaller bodies need less fuel.I’ve had to downscale my portions twice now.And I’ve been going through a third period of natural reduction, I still prepare my usual portion and if I am sated before I’ve eaten the entire portion I just put it in a small plastic container and refrigerate it.If this happens often enough I think I can downscale the portion more. There have been a few lumps and bumps down the road, in 2018 I would often have one or two days of ravenous appetite a month. This was always in my pre-menstrual week so I’m guessing it was hormonal. If it turned out that what I had planned to eat that day wasn’t enough I would fix the issue by defrosting another bit of meat, preparing it and eating it. I have small portions of meat in the freezer for that pur

I’m glad to be a fellow carnivore now even though I am only half a day in, I just feel like this is going to benefit me in many ways. from Zero Carb Zebras http://bit.ly/2PEQVfC via IFTTT

I Call This My "Super Breakfast"! "Super" is for Delicious, Nutritionally Dense and Cheap!

https://imgur.com/Ye61OMWI eat this for breakfast / my first meal of the day about every other day. It tastes amazing, makes me feel amazing and costs next to nothing! Very nutritionally dense, covers all the bases so to speak and provides my body with long lasting energy. I legit get a buzz after eating this! Like I need to sit down for 5 minutes post-meal as happy endorphin feelings flood my brain. I am not saying eating this meal will definitely open up your third eye to new and unknown experiences of cosmic consciousness but if you read my whole post carefully you won’t find it written anywhere where I said it won’t do that either. Just something to keep in mind. The meal (forgo spices if you’re sensitive, they don’t bother me):- Calf Liver (salt, pepper, onion powder) fried in Kerry Gold grass-fed butter- 6 Large Eggs (salt, pepper) scrambled in calf liver juices, plus additional butter (I typically use a half stick total for the meal). Approximately 2oz of gouda cheese in with the

Do you eat cold beef?

I’m looking to re-transition to carnivore after a foolish hiatus of several months. I’m a bit scared about the transition to just meat / just beef. I have occasionally found it unpalatable, or even nauseating. Part of this is the eating of cold beef that I perhaps roasted the day before. I’d like to know if other people eat cold beef, and how they handle unpalatability and food boredom early on in this diet. Also what are people’s go-tos for adding fat to their meals? Just tallow? Is it nice? from Zero Carb Zebras http://bit.ly/2WdbnGS via IFTTT

Severe Insomnia>Anxiety>Depression; Anecdotes & Experiences wanted!

Hi there!Im a 40 year old male from Norway, Europe.I dont even know to describe how I have been doing for the last 3 years. It has been total devastation from severe insomnia leading to depression, anxiety, depersonalization, derealization, confusion, horrific brainfog (to the point where it feels like all my skills/ former life is gone; like I dont “remember” my skills/interests/education/experiences, borderline psychosis/ religious delusions, very bad short term memory/ ability to plan/ do simple logistics, horrific hypochondria/ fear of having any ailment in this world (cancer, parasites, heavy metals, viruses, Lyme, mould etc).Physical symptoms include; severe fatigue, dizziness, not feeling in touch with myself/ my limbs, coordination issues, changes in sense of smell, taste etc., chronic sinusitis, bodily numbness, rectal bleedings, back pain. My days are basically spent doing very little, and I feel totally disconnected from myself/ the world (feels like “hell on earth”, like

Mood swings and aggressive anger

Hi all I’m Day 4 Z/C and having mood swings but the worst of all anger!!! I feel like I could punch all the walls down in my home and I can’t stop thinking ruminating aggressive thoughts, yet on day 2 I had Z/C “ZEN” and it was wonderful, total bliss. And now today I feel achy inflamed and very angry so is this all part of normal adaption in the early day’s? I’ve tried working it off but that just making me even more angry as if its fuelling the adrenaline , I’m female but feel like an alpha male at the moment from Zero Carb Zebras http://bit.ly/2WjxyLi via IFTTT

ZC On The Cheap! Today's Dollar General Haul ($24.69)

https://imgur.com/SMcEI15I’m not sure if this is an all locations thing but every single Saturday my local Dollar General has a $5 off $25 (or more) sale. I rotate a few items but pretty much have it down to a science A very respectable amount of meat for under $25 if I don’t say so myself! Some other good ZC items from Dollar General include Mac’s Pork Rinds (ingredients; Pork Skin with Fat, Salt) for $1 a bag, bacon of decent quality (no carbs but sugar as the last ingredient), pre-cooked bacon of the same quality, frozen shrimp, frozen chicken breasts, frozen burgers patties, canned chicken, canned tuna, canned beef, canned pulled pork, sour cream and a decent variety of other cheese options. For the uber purists and the curious; I’ve been eating this way for 8 months now including multi-month streaks of extremely strict ZC (i.e. just meat and water). The small amount of jalapenos in the pepper jack cheese do not cause issue for me. Actually its rare that I get pepper jack, usually go

Starting to See Some of Those "Vegan" Stares from Fellow Carnivores

I don’t know about some of you, but lately, I have been feeling that burning stare of disapproval that vegans give coming in my and other people’s directions when it comes to eating something “slightly” off the carnivore diet, yet, 98% of said food is still meat. Please do not turn this way of eating into……..*cough*……THEIR way of eating.I, for the most part, eat my chuck roasts reversed seared, salt, pepper, garlic, and coriander day in and day out. However, if I see some interesting beef jerky in a store, I will buy it! I’m not going to worry that there is extras in there, as well as some sugar. Am I eating a spoonful of sugar for fun? NO! I’m having some BEEF jerky, and last I checked, beef is carnivore. Now, some will argue, “Yeah, well, all those extra additives that don’t belong in the carnivore world shouldn’t be eaten.” Well, then I guess I’m 99% carnivore and not 100%. If my body accepts those foods without any issue, I will gladly eat them. As many people have said on here, Car

Grass fed beef consistency?

http://imgur.com/a/E9EXk4I Thawing one of my ribeyes from my butcher shop right now. It’s $20.99 a pound and this one cost me $18.58. it’s gonna be my first time trying steak from a local farm, I’ve had frozen ground beef packs $6.50 a pound from a small local farm though. One looks pretty marbled to me, but I guess it’s hard to get consistent quality ( also Frank Tufano said grass fed cows are often butchered at a younger age :/ ) it’s expensive especially for frozen, but I’m excited to cook it up very rare! I’m buying from here because I don’t want to support Amazon and Walmart too much, but I would prefer it fresh and cheaper lol. What do you guys think about sourcing grass fed beef and supporting farms if you can afford it? Do you think the difference in frozen or fresh is a big deal? I hear that the beneficial bacteria die when you freeze it..maybe I should just eat both frozen and fresh. from Zero Carb Zebras http://bit.ly/2UNulC9 via IFTTT

Arthritis flare-up whenever I eat beef

I have RA and have been eating zerocarb for the past 2 weeks to see if there’d be any benefit. I’ve noticed that literally every single time I eat beef I will get severe inflammation within 10-20 minutes. My knees turn bright red and become hot to the touch. I’m fairly perplexed by this as everyone else with auto-immunity seems to do well on meat. Has anyone here experienced anything like this? from Zero Carb Zebras http://bit.ly/2GCTn21 via IFTTT
