Animal fats (beef fat, tallow, dripping, lard)

Hello! I have tried searching but haven’t found an answer, sorry if this question is basic. Where can I find info on why grass-fed beef fat and pasture raised lard isn’t listed on the paleo diet website as paleo compatible? I would like to know whether this is a purist ancestral view that the hunter gatherers would have eaten lean meat, or whether there is something about those fats that is not considered healthy by the paleo people. I’m new/ looking into paleo and coming from an ancestral/traditional preparation/ real foods kinda place, via ex-vegan (not up for discussing veganism tho sorry). Trying to work out why some things are not included and haven’t found the animal fat info. Thank you!
