What are your favorite Paleo "cheese" sauce recipes WITHOUT nutritional yeast?

I really hate the flavor of nutritional yeast, and after researching how it’s made I just don’t want to use it. But I DO want to try scratching the cheese itch. Be it mac and cheese style or Alfredo sauce style. Do you have any favorite recipes?
