more insoluble fiber than soluble*

im not paleo but i thought you dudes might be able to help me. it seems like a lot of modern plant foods have been bred to be a lot plumper. i would think that the original versions would have been stringier and more fibrous which generally indicates high insoluble fiber. im thinking things like roots and seeds. would anyone happen to know if earlier plants that man ate actually had more insoluble fiber?
