Do chia and flaxseeds oxidize easily? [question]

I’ve been reading some articles that say that you have to use flaxseeds right away after you grind them because the oils in it go rancid quickly. I also read you should never buy flax meal for this reason. Is this true? Do chia seeds react the same way?

Also,I’ve been wondering if it’s safe to use these seeds in baking and recipes since the omega 3 is unstable. Would heat destroy them?

Any sources you have would be appreciated as well. πŸ™‚
