Another day, another #glutenfreecookie recipe. I bet you’re surprised ππ€£.
This one was inspired by all the quinoa flour I have in my pantry, but I’ve kept making them because of my taste buds. π I love that they don’t taste super sugary, are healthy enough to eat for breakfast and are higher in plant-based protein thanks to quinoa flour. Plus they’re super thick and fluffy at the same time! π

⭐️ For the #VeganCookies:
1 cup + 1 TBSP quinoa flour
4 TBSP coconut flour
¼ cup cacao powder
1 tsp baking powder
¼ tsp baking soda
2 tbsp coconut sugar
1 ground chia (like from @foodsalive)
½ cup aquafaba (or the liquid from a can of cooked chickpeas)
¾ cup water or milk
Optional: a handful of chocolate chips
Bake at 350 for around 15-20 minutes!
