I just spent 20 minutes writing up a semi-deep post about what I’m grateful for in the age of #covid_19…only for my phone to glitch and that post to disappear. (A decent metaphor for 2020 so far, maybe? πŸ™ŒπŸ»πŸ€·πŸ»‍♀️πŸ˜…) Sooo I’ll keep it short and sweet and just say:⁣

πŸ’• I’m grateful to have made it safely back to my apartment in Minnesota (even if my college still won’t be re-starting with online classes until March 30). 🀯⁣

πŸ’• I’m grateful to be able to stay in touch with friends and family, even if I’m many states away from my loved ones.⁣

πŸ’• And I’m grateful to have a well-stocked fridge, freezer and pantry, which includes these chocolate cookies I made and froze before I traveled! They came out just as delicious defrosted as when freshly baked, and if you end up going a little baking crazy while stuck at home, I can’t recommend freezing baked goods enough! Makes for a delightful treat later on. πŸ˜‰⁣

And while I don’t have an exact recipe for these cookies as I threw them together in a rush, I can report that using @safeandfair’s chocolate brownie mix is delicious in cookie form. I combined it with a mashed banana, coconut flour and aquafaba from an opened chickpea can πŸ‘πŸ». ⁣
