I’m days away from starting my last year of grad school (#AD), and I have a feeling that this epic BLZ (beet, lettuce and zucchini ππ) sandwich is gonna make several appearances in my lunch box π. The star of the show? @littlenorthernbakehouse Seeds and Grains sandwich bread π, which is not only #certifiedglutenfree but also plant based and non-GMO. Plus, their bread is seriously some of the lightest, fluffiest gluten free bread I’ve ever tasted π€―π€― - and I love the crunch from the added seeds and grains in this flavor! To make my BLZ sandwich, I mashed some rinsed canned chickpeas with a bit of beetroot powder πand lemon, and slathered that purΓ©e on one slice. Then, I added some lettuce, steamed zucchini coins π₯ and broiled purple cabbage, and enjoyed a handful of green grapes on the side π. Simple, full of plant based protein and delicious.
