I’m days away from starting my last year of grad school (#AD), and I have a feeling that this epic BLZ (beet, lettuce and zucchini 😏😏) sandwich is gonna make several appearances in my lunch box 🛍. The star of the show? @littlenorthernbakehouse Seeds and Grains sandwich bread 🍞, which is not only #certifiedglutenfree but also plant based and non-GMO. Plus, their bread is seriously some of the lightest, fluffiest gluten free bread I’ve ever tasted 🤯🤯 - and I love the crunch from the added seeds and grains in this flavor! To make my BLZ sandwich, I mashed some rinsed canned chickpeas with a bit of beetroot powder 💕and lemon, and slathered that purée on one slice. Then, I added some lettuce, steamed zucchini coins 🥒 and broiled purple cabbage, and enjoyed a handful of green grapes on the side 😍. Simple, full of plant based protein and delicious.
