Why everyone finds it strange that i want fatty meat? (when buying it)

Im from Italy, and i buy the meat from local farmers, everytime i ask for meat that is as much fat as possible they either ask me how I’m going to prepare it and make a confused face or, sometimes like today, they took a huge piece of fatty meat and started ‘cleaning’ it from the 'excess’ fat, then i said, “no , no, i want as much fat as possible, just give the the whole piece please”, he was confused, and in the end he finally gave it to me with all the fat on.This happened a couple of times already..even if i say that i want fatty meat they still try to cut some fat off…its like if they never sold a single piece of meat without trimming away the fat..what’s the point of making the animals fat if in the end they are going to throw it away?Does this happen only to me? anyone?
