Tips for cooking Beef Liver?

I’m looking for recipies on different ways to cook beef liver. I know the standard of soaking in milk and covering with flour but that won’t work for zero carb… I do have an air fryer but cooking with liver(in pan) before I sometimes turn it to bark… Thoughts/ideas?
